Prep the lentils:
- In a bowl, mash the cooked brown lentils slightly (keep some texture).

Mixing other ingredients:
- Add spinach, mixed veggies, oats flour, and ginger-garlic-chilli paste.
- Mix in Indian spices, za’atar and salt.
- Combine well to form a dough-like mixture. If too soft, add a little more oats flour.

Shape and cook:
- Shape into medium-sized patties, coat them in sesame seeds
- Heat a pan, add a little oil, and shallow roast patties on medium heat for 4–5 minutes per side until golden and crisp.
- You can also brush them with oil and air-fry them

- Serve hot with yogurt dip, hummus, or in a wrap/burger.
