- Squeeze out extra water from the grated zucchini using your hands or a clean cloth
(important so slice isn’t soggy). - In a large bowl, whisk eggs, cottage cheese, oil, and seasonings.
- Add zucchini, carrot, other vegetables, cheese, fibre and flour.
- Mix until well combined. Batter should be thick but pourable. Add water to adjust consistency
- Squeeze out extra water from the grated zucchini using your hands or a clean cloth

- Pour into tray and spread evenly.
- Bake for 30–35 minutes until firm and golden on top.
- Cool for 10–15 minutes before slicing.
