Prep the soya chunks:
- Boil soya chunks for 5–7 minutes, drain, rinse, and squeeze out excess water. Pulse or finely chop.

Sautee the aromatics and mushroom:

In a pan, sauté garlic and ginger in a little oil. Add mushrooms and cook until moisture evaporates.

Add scallions and cook for another minute. Let the mixture cool slightly.

Mix and shape:

In a bowl, combine chopped soya chunks, mushroom mix, oats flour, and salt. Mix well to form a dough-like mixture (add a little water if needed).

Shape into small nuggets or patties.

Pan-cook on a greased pan (or air-fry/bake) until golden and crisp on both sides.
