Ingredients:
  • 1 cup cooked brown lentil
  • 1 cup spinach (thawed spinach balls, squeezed dry)
  • 1/4 cup oats flour
  • 1/2 cup mixed veggies (carrots, peas, corn – finely chopped/steamed)
  • 1 tbsp ginger-garlic-green chilly paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilly powder
  • 1/4 tsp garam masala
  • 1/4 tsp amchur powder (dry mango powder)
  • 1 tsp zaatar
  • 1 tbsp oil (for cooking)
  • 2 tsp til seeds (sesame seeds)
  • salt to taste
Method:
  1. Prep the lentils:
    • In a bowl, mash the cooked brown lentils slightly (keep some texture).
  2. Mixing other ingredients:
    • Add spinach, mixed veggies, oats flour, and ginger-garlic-chilli paste.
    • Mix in Indian spices, za’atar and salt.
    • Combine well to form a dough-like mixture. If too soft, add a little more oats flour.
  3. Shape and cook:
    • Shape into medium-sized patties, coat them in sesame seeds
    • Heat a pan, add a little oil, and shallow roast patties on medium heat for 4–5 minutes per side until golden and crisp.
    • You can also brush them with oil and air-fry them 
  4. Serving tip:
    • Serve hot with yogurt dip, hummus, or in a wrap/burger.
