Ingredients:
  • 6 large eggs
  • 1/2 cup cottage cheese (blended for smoother texture if preferred)
  • 1/2 cup spinach (finely chopped)
  • 1/2 cup capsicum (finely chopped)
  • 1/4 cup carrot (grated)
  • 1/4 cup onion or spring onion (finely chopped)
  • 1/4 cup mushroom (finley chopped)
  • 2 tbsp grated cheese (for the topping, optional)
  • salt and black pepper as per taste
  • 1 tbsp Coles Dietary Fibre
  • garlic powder or 2 cloves minced garlic
  • olive oil (to grease the tray)
Method:
  1. Prep:
    • Pre-heat the oven to 180°C.
    • Lightly grease the muffin tray with olive oil 
  2. Prep the batter
    • In a bowl, whisk eggs and cottage cheese until smooth.
    • For a softer texture, blend for 10–15 seconds.
    • Add all chopped vegetables, fibre and seasonings. Mix well.
  3. Bake:
    • Pour mixture evenly into muffin cups, filling each about 3⁄4 full.
    • Sprinkle cheese on top if using.
    • Bake for 18–22 minutes or until firm and lightly golden.
    • Cool for 5 minutes, then remove from tray.
