Ingredients:
  • 2 medium eggs
  • 30 gm cottage cheese (about 2 tbsp)
  • 2 tsp Coles Wellness Road Dietary Fibre Blend (about 6 gm)
  • 1/4 cup mixed veggies (finely chopped spinach, capsicum, zucchini, mushrooms)
  • 1/2 tsp olive oil
  • salt and pepper
Method:
  1. Whisk things up:

    • Stir in the chopped veggies.
  2. Cook it up:
    • Heat olive oil in a small non-stick pan over low–medium heat.
