Ingredients:
  • 1 cup rolled oats
  • 1/2 cup cottage cheese
  • 2 tbsp Coles Wellness Road Dietary Fibre Blend
  • 1 medium banana (mashed)
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/4 cup milk of choice (adjust to bind)
  • 1/4 cup mixed berries
  • handful of dark chocolate chips (optional)
Method:
  1. Prep the oven:
    • Preheat oven to 170°C. Line a small baking dish with baking paper.
  2. Mix it up:
    • In a bowl, combine oats, fibre blend, and cinnamon.
    • Add mashed banana, cottage cheese, egg, honey, and milk. Mix well.
    • Fold in add-ins if using.
    • Pour mixture into the tray, flatten evenly.

  3. Bake:
    • Bake 20–25 minutes or until set and lightly golden. 
    • Cool completely before slicing into 6 bars
