Ingredients:
  • 1 cup soya chunks
  • 1/2 cup oats flour
  • 1 cup mushrooms (finely)
  • 1/4 cup scallions
  • 1 tsp garlic (minced)
  • 1 tsp ginger (grated)
  • 1 tbsp oil
  • salt to taste
  • water as needed
Method:
  1. Prep the soya chunks:
    • Boil soya chunks for 5–7 minutes, drain, rinse, and squeeze out excess water. Pulse or finely chop.
  2. Sautee the aromatics and mushroom:
    • In a pan, sauté garlic and ginger in a little oil. Add mushrooms and cook until moisture evaporates.

    • Add scallions and cook for another minute. Let the mixture cool slightly.

  3. Mix and shape:
    • In a bowl, combine chopped soya chunks, mushroom mix, oats flour, and salt. Mix well to form a dough-like mixture (add a little water if needed).

    • Shape into small nuggets or patties.

    • Pan-cook on a greased pan (or air-fry/bake) until golden and crisp on both sides.

    • Serve hot.
